Vegan Nicoise Salad

Ingredients

1 head Butter, Bibb or Green leaf lettuce (cleaned and chopped into bite size pieces)

1/4 cup Nicoise, Greek or Black olives (pitted and sliced)

1/2 cup Green Beans (cooked, cooled and cut into 1" pieces)

12 Cherry tomatoes (Sliced in half)

6 Red bliss or fingerling potatoes (steamed or boiled whole until tender, cooled and cut in half or quarters)

1/2 cup chickpeas (drained)

6 oz Tuna of the Tree

3 teaspoons chopped onion

5 tablespoons mayonaisse (We use Hellman's vegan)

Dressing

1/2 cup olive oil

2 tablespoons red wine vinegar

1/2 teaspoon dijon mustard

1/4 teaspoon garlic (minced)

1 teaspoon mayonaisse (vegan recommended)

pinch salt and black pepper

Mix Tuna of the Tree with mayonaisse and chopped onion in a separate bowl.

Mix vinegar, mustard, mayo, S&P and slowly whisk in olive oil for dressing.

Toss lettuce with dressing and place in center of plate.

Place all other ingredients around or on top of the lettuce.

Yields 4 salads
